Mussels De Al Diabo

Ingredients

200g mussels

1 cup tomato

2 tbsp shallot (sliced)

1 tbsp chipotle paste

1 cup chicken stock

2 sprigs thyme

3 slices baguette

2 tbsp butter (unsalted)

1 tbsp veg oil

1 tbsp salt

1 tbsp pepper

Preparation

Step 1: Baguette 

1. Slice a baguette on a bias and toast in melted butter and thyme.


Instructions:

1. Preheat a pan on medium heat, and add a tablespoon of veg oil.

2. Add minced garlic and cook until fragrant, then add shallots and cook until translucent.

3. Add diced tomatoes followed by the pre-steamed mussels. (cook for 3 minutes)

4. Deglaze a cup of chicken stock and bring to a simmer.

5. Add a tablespoon of chipotle paste (chili paste as a substitute)

6. Cook mussels for another 3 minutes until the broth is brought back to a simmer

7. Add salt and pepper to taste.
